Paxx Caraballo Moll is a chef and restaurant owner of Jungle Bao Bao in San Juan Puerto Rico. They have been recognized by Food & Wine, James Beard, and by followers on Instagram for starting the hashtag #QueersInTheKitchen. Paxx is known for their creative and elevated vegetarian and vegan dishes and for being at the heart of Peurto Rico's local food movement for years. We sit down in their restaurant and discuss food, individual paths, being transgender, and their personal transition.
